First, try the Avery Index. Go to advanced search and under Physical Description choose plans from the drop down box. Then enter the term bakeries into the search bar. The Avery Index will point you to articles in journals. The Alumni Library has many architectural journals, but not all of the ones indexed in the Avery Index. If you need one that we don't have, please request it via interlibrary loan or see a librarian for assistance.
Architectural Graphic Standards should always be checked for designs and standards of furnishings and equipment. You can find this on reserve at the Circulation Desk.
You might want to browse book collection under supermarkets and restaurants. The call numbers are 725.21 and 725.71.
